Lemon Balm produces a citrusy lemon taste with a subtle hint of mint. In the middle ages it was considered the 'elixir of life' due to it's mystical healing properties.
Despite being a kitchen herb, lemon balm also has cosmetic uses, helping to reduce common symptoms of acne such as redness of the skin and swelling.
A personal favourite of ours is lemon balm tea. While the kettle is boiling, fill a tea strainer full of fresh lemon balm leaves then let the leaves to brew in the hot water for 5-10 minutes and enjoy! Lemon balm is thought to help with a good night's sleep.

Lemon balm was first mentioned in writing back in 300 BC and was referred to as the "honey-leaf"!
