Chives have been used since the middle ages, mainly in China. Surprisingly, all parts of the chive plant are edible, including the bright purple flowers. However, most dishes only use the green stems (scapes) for their delicate onion flavour. Many people compare their taste to leeks.
Chives are a good source of calcium, they also contain high amounts of potassium and vitamins A and C. We love to use our freshly cut chives in stuffed baked potatoes. Fill each potato with a mixture of sour cream, milk, butter, salt, pepper and of course, chives for a tasty dinner.

Dutch farmers feeds chives to their cattle to add a unique taste to the milk!
